Our villa, Rose Dog, overlooked Toiny Bay. Montana from the concierge company had suggested we lunch at the Le Toiny Beach Club. She said we wouldn’t be disappointed, and she was right. We circled Hôtel Le Toiny on our handy island map and fired up the Suzuki.

A short drive later, we were seated in the shade of a palm tree with our toes dug into the soft sand and wine spritzers in our hands. Pure bliss. We ordered gazpacho topped with avocado chunks, tuna tartare, and grilled flat bread. Service was excellent, the food good, and the ambience unforgettable—an ocean view and the soft, soothing sound of gentle waves lapping the beach. We lingered for quite some time, strolled the shoreline, and then hopped onto the hotel shuttle for the ride back to our rental car.

We whiled away the afternoon swimming at our villa, relaxing, and reading. We had dinner reservations at On The Rocks at the Eden Rock resort. The restaurant is located in the village of St. Jean on a rocky outcropping overlooking white sandy beaches and crystal clear blue waters. Eden Rock is owned by Jane and David Matthews, whose son James is married to Pippa Middleton.

Like many resorts on the small island, Eden Rock suffered considerable damage during Hurricane Irma, but it’s heartening to know that the destruction has not dampened the spirits of the people. On Eden Rock’s website is the greeting: “A breathtaking Home Reopening Late 2018.” And on Hôtel Le Toiny: “All of us here at Hôtel Le Toiny St Barth and indeed the entire population of St Barth are working hard towards a speedy and thoroughly healthy recovery for our beloved island. “Paradise will be regained!”

Our dinner at On The Rocks began with Ceviche de Poisson and was followed by St. Jacques Rôtie (scallops); Black Cod Caramelise; and Risotto Herbes & Caviar. For dessert, we indulged in Millefeuille Praline and espresso.
